Salmon patties are one of the things that I used to make all the time … then, for some reason, I just stopped.

It’s a very cheap option for the menu, but even better than that … it was QUICK!

Ingredients:

One 14 oz can of salmon
One egg
1/4 cup of mayo
1/2 cup of water
One box of Zatarain’s Salmon Cake Mix (You could also use bread crumbs or crushed saltine crackers)
Vegetable or canola oil

Mix the Zatarain’s, salmon, egg, mayo and water together. (The salmon looks disgusting when it comes out of the can. Just flake it with a fork and trust that it will become less gross.)

Cover it and put it in the fridge for 30 minutes. This helps it set up with the egg and will hold the patties together. (You can do this earlier in the day. Refrigerated for more than 30 minutes won’t hurt.)

Pour the oil in the bottom of a frying pan – about 1/8″. Heat the oil. Form the patties and fry!

Super easy … and incredibly yummy.

My kids will eat these. In fact, they had second’s!
