Meal Plan

I’m loving the idea of meal planning. It really made the nights last week much much easier.

Here’s what we have on deck for this week:

Monday: Fiesta Chicken Enchiladas (recipe from Kraft foods)

Tuesday: Sloppy Joes

Wednesday: Chicken Parmesan

Thursday: Salad with Tuna and fresh veggies

Friday: Homemade Pizza

Saturday: Steak and baked potato

(If there are a lot of leftovers, we’ll scrap eat them along with salad on Thursday.)

School Snack Plan -

Monday: Carrots

Tuesday: Chex Mix

Wednesday: String Cheese

Thursday: Carrots

Friday: Cereal (Trix)

Pantry Tour

One of the things that I love about my house is the pantry. I think that with every home that you own, there’s always that one area that you love and know you’ll probably never have again. In our last house, it was a beautiful exposed brick fireplace … in this house, it’s the pantry. Hands down. It’s huge!!!

Since beginning The Grocery Game over 3 years ago, it’s been fully stocked. I’ve posted pictures occassionally and many of you have asked to see exactly what is in there and how it is organized.

So, without further wait, here it is: The Pantry Tour.

Meal Plan for Week of August 23

Last week, I wrote about meal planning and how I’m really making an effort to get on this train! As I’ve thought more about this, I’ve come to the conclusion that I need to plan at least 2-3 weeks ahead. Since I’m a compulsive coupon user, I need to be able to look ahead to see what ingredients I’m going to need. Along with the meal plan for the week, I also will be planning school snacks. (Our after school care provider includes snacks for after school as part of our tuition.)

In thinking one week ahead … Here’s our plan for the week of August 23:

Monday: BBQ Pork Loin
Tuesday: I’ll be trying a new recipe. I’m giving Creamy Pasta Primavera a try!
Wednesday: Hamburger Helper
Thursday: Fiesta Chicken Enchiladas
Friday: Meatballs (possibly Meatball Subs)
Saturday: California Chicken Salad
Sunday: At some point, we’ll need to have a night of leftovers. Once that point comes, all recipes will shift and take care of Sunday!

School Snacks: I have compiled (with your help via comments), 18 different options. With an average of 20 days per month, that is AWESOME. (PS – We are a peanut free school, so you won’t see any “peanuty” options on my list.)

Monday: Carrot Sticks & Ranch (I’ll put the ranch in a snack bag.)
Tuesday: String Cheese
Wednesday: Pretzels
Thursday: Go-Gurt (I’ll have to confirm this will work when I find out snack times. If snack is in the AM, it will be fine. If it’s in the PM, we’ll have to do something else.)
Friday: Carrot Sticks & Ranch

I’m repeating carrot sticks and ranch, because I’ll buy a bag of mini-carrots. I want to make sure that they all get eaten before they go bad. On fresh items with a quick life, I’ll repeat them during the week.

Time for Meal Planning

We talked a few weeks ago about the best snacks to send with kids for school. (What awesome ideas you all gave!!!) Now, it’s time for meal planning. This is something that I’ve always wanted to dig into … and many times I’ll make a plan only to have it foiled or things just not work out. I’m really wanting to stick with it this time. It will make our lives so much easier … and let’s face it – it’s cheaper in the long run since you are buying intentionally.

My goal is to have 25 meals that I can alternate throughout the month. Since I work outside the home, I need them to be quick and relatively painless to make.

This is our family meal routine: Monday & Tuesday – eat at home; Wednesday – eat fast food because the kids have choir at church; Thursday – eat at home; Friday – order pizza; Saturday – sandwiches for lunch & dinner at home; and Sunday – lunch out after church & dinner at home. I take my lunch to work everyday. I buy frozen meals in mass when they are on sale. I’ll take leftovers if there is only one serving. Don eats at Subway every day. (Yes, every.single.day.)

I receive a Kraft newsletter each week. The recipes always look fantastic, but I’ve not devoted myself to trying many of them. This fall, I’ve challenged myself to trying at least 2 new recipes each month. (I’ll more than likely do these on a Sunday night … more time to prep and really read the recipe!).

Chili’s – Best Burger in Town

When we first moved to our suburb, there was a clear lack of restaurants – especially compared to what we were used too. One of the first sit-down places that opened was Chili‘s. If we could have, we would have helped hammer in the nails as they were under construction. We were so excited!

Luckily, after they opened, we were not disappointed. The dining room is large and clean. The bar is similar and offers a huge amount of seating which is nice if you don’t feel like waiting … it’s open seating.

Aside from the food, my favorite thing about our neighborhood Chili‘s is call ahead seating. We use it ALL.THE.TIME. In fact, we eat there more often, because of this feature. With 2 kids in tow, waiting an hour to be seated is not on our lifeplan.

Needless to say …. we love Chili‘s. So, when I was approached by Chili‘s for a marketing campaign, I was a sure thing.

Don and I were excited to take part and although we have our “go-to” favorites that we get every time ….

(… like yummy Southwestern Egg Rolls. Oh my goodness … they are so good.) We were committed to trying something that we otherwise might not.

We started with Skillet Queso Dip …

… served with chips, it is more like a chili and chesse dip. We absolutely loved it.

Don ordered a Jalapeño Smokehouse Burger. It looked incredible.

With applewood smoked bacon, smoked cheddar, tortilla strips, the bacon alone would be worth ordering the burger. It was so thick and juicy … it looked like heaven on a plate.

I ordered the Bacon Burger and asked for it to be sprinkled with bleu cheese.

I couldn’t believe how large this burger was. I actually had a hard time finishing it, but it was one of those times when I couldn’t put it down. The juices that were flowing out of the burger were so good. The bun was thick enough that it didn’t fall apart, but just soaked up all the juice. I was so impressed.

Each of these burgers came with fries. Don ate all of his while I didn’t take a bite of mine. That says a lot since I love the seasoning on Chili’s fries.

I hate to admit this, but we loved what we had so much that we went back again 4 days later. We, again, order the Skillet Queso and decided to split a burger since it was for lunch.

We opted for the Ultimate Stacked Burger. It has 2 patties, cheese, bacon, and onion strings.

We cut it in half and neither of us could fit it in our mouth … Now THAT my friends is saying something! We loved it … and couldn’t eat it fast enough. The quality of meat that they are using in these patties has enough fat that it makes a really flavorful juice, but is meaty enough that it stays thick even as you hold on to it in the bun. It’s a great combination. Much better than what we use at home!

Although our kids didn’t join us this time, I feel like I should add that they LOVE going to Chili‘s. As a mom who doesn’t allow them to eat junk 24 hours a day, I really appreciate the healthy options on their menu. The kids alternate between pizza, quesdilla, and macaroni and cheese. For sides, they love the steamed broccoli, corn on the cob, and mandarin oranges.

Is there a Chili‘s in your area? If you don’t eat there often or haven’t tried it in a while, I’d encourage you to go back. The new additions to the menu, as well as the old favorites are better than ever! They might have converted me to a burger girl again … I’ve fallen in love with each one I’ve tried.

Mission Tortilla is a Hit!

Several weeks ago, I attended the Mom 2.0 summit in Houston. One of the sponsors of the conference was Mission Tortilla. I was so impressed with the staff representing them – professional, courteous, and really understood that, as a mom, I am very concerned with what my kids are putting into their mouths at meal time.

When approached by Mission Tortilla to try some products, I jumped at the chance. If there is one thing we love, it’s tortillas.We’re Texans, you know! We love anything wrapped, fried, grilled or served in a tortilla!

The first product we tried was LifeBalance Wheat Tortillas. Let me be completely honest by starting with … I didn’t want to eat these. I like wheat bread, but I HATE wheat pasta and the like. I was really scared.

They were SO good. I could not get over it! We used these when making regular chicken fajitas (the kids ate them as cheese quesadillas).

In the future, we’ll be using these for tacos, enchiladas, and cheese wraps that I send with the kids for school snack.

The second product we tried was the Jalapeno Cheddar Wraps. Oh my gosh … so flavorful and yummy. They are remarkable! Be sure to fill them with atangy item to really pull out the spicy flavor of the wrap. (I used grilled chicken, lettuce, and ranch dressing.)

If you need some new recipes for your Mission products, I’d suggest you try MissionMenus.com. Pick the product that you want to cook with and you can find recipes specific to that particular shell. Genius.

These products are amazingly flavorful and so incredibly fresh. I HIGHLY recommend them. In the past, I’ve always purchased the plain, flour tortillas and left it at that … branch out, try something new. Mission has some great options when you are bored with your old faithful! We’ve turned over a new leaf … Opened up a whole new world of flavors for one of our favorite food items.

Weigh 2 Go! Update

I’ve been so good this week and I’m really seeing results. I started slowly and have built up speed. I can honestly say that I truly think it’s because of this that I feel like things are taking shape (no pun intended … well, maybe a little).

Here’s the low-down. The important part. I’ve lost 10 pounds. Whoo Hoo. This morning I fit into jeans that I haven’t worn in 6 months (actually 1 size smaller). HOORAY!!!

I’ve gotten a lot of messages today asking how I’ve done it. It’s been a complete life change, but seeing the pounds melt away is making it worth while. Here’s what I’ve done:

1. Week One – Cut from 3 Diet Cokes per day to 1. Also cut out all fried food. (Not easy. I struggled, but I did it.)

2. Week Two – Cut out Diet Coke all together. Began drinking Crystal Light and Iced Tea with Sweet N Low.

3. Week Three – Used an online food journal (Sparkpeople). Watched what I ate and only ate when I was hungry. I substituted cereal for a dinner a couple of times. Also ate a protein bar each day for breakfast. I was down calories most every day. I’ve only exercised twice, and made a conscience decision to not exercise on days that I was under 1,000 calories. Something about that made me think it might put my body into shock.(Definitely not what I’m trying to do.)

I’m shooting for 1,200 calories per day; 163 carbs; 32 fat; 60 protein. My averages are way under that … but with the exception of one time on Saturday, I really haven’t felt hungry. I totally attribute that to drinking 6 glasses of water (or water-like substances) per day. I’m shooting for 8 glasses, but considering I used to drink “no” glasses that’s pretty good.

Aside from the protein bar at breakfast, I’ve had a Lean Cuisine or Weight Watchers Smart One at lunch. For dinner, I’ve either had cereal with a banana; a salad (iceburg lettuce, banana pepper rings, goldfish, 1/2 breast of grilled chicken, and Kraft Light Italian Dressing); or Grilled Chicken and steamed vegetables. {I’m really getting tired of chicken. I’m a red meat kind-of girl … I could seriously “cluck” at any given moment.} I haven’t snacked, because the only time I’ve gotten hungry is close to meal time. If it’s within a 90 minutes of a meal, I drink a bottle of Crystal Light and wait it out.

Savings Savings Savings

Anyone that has followed me long knows that I love to save money. I never thought that I could have an addiction until I learned the value of a coupon. Now, I feel confident in saying that I’m an expert, but it’s taken years of really learning the ropes. It’s not been hard … it’s just required persistence and confidence in trying new things until I learned what saves the most money for our family.

Some of you are probably landing here today because you heard me on the KSBJ Midday Show. I’m so happy to be forming a partnership with such an outstanding radio station. I’m excited that I can share what I have learned with listeners all over the country. If there is a specific subject you would like to have addressed, please comment this post or send me an email. Today, I gave a basic rundown on how to use a coupon. Let me recap it for you:

(1) Go online to the stores where you shop – grocery chains and drug stores are a definite. Once you are there, find their weekly sales circular and subscribe to it via email.

(2) Gather coupons from any and every where. 95% of my coupons are from the Sunday newspaper. I get three papers per week. (We are a family of four.)

(3) Begin to match the coupons you have with the store sales. Maximize your savings. For example, a bottle of dressing is marked down from $2.25 to $1.50. A good savings right there. Now top that with a 75-cent coupon and you have taken the product from $2.25 to 75-cents!

(4) Find out if you have any stores in your area that double/triple coupons. Your savings will SKYROCKET! Houston has one major chain store that does this. It makes a world of difference.

(5) Use the internet for help. No need to reinvent the wheel with this. I subscribe to The Grocery Game. Feel free to use that link to hop over to my page that describes the process with this site. There are many others – HotCouponWorld.com, CouponMom.com, etc.  (If you are going to buy coupons online, I recommend TheCouponClippers.com.)

The Best Pumpkin Dessert Ever!

pumpkinsI totally stole this recipe from Jennifer Mills. She wouldn’t know me from Adam, but she’s the wife of the former Student Pastor at the church we attend. Somehow this recipe got some Twitter time from other members of the church staff last week and I wanted to check it out. By pure luck, the recipe was on Jennifer’s blog. I made it and … seriously … can not get enough of how good it is. Even Don said last night “I think this might be the best thing you’ve ever made.” It’s that good.

So, I’m posting the recipe here, but know in advance that I can’t claim it …. I can only speak to the result – HEAVENLY!

PUMPKIN CRUNCH CAKE

1 pkg. Duncan Hines yellow cake mix
3 eggs, beaten
1 16 oz. can pumpkin
1 12 oz. can evaporated milk
1 1/2 cup sugar
1 tsp pumpkin pie spice
1/2 tsp salt
1 cup pecans
1 cup melted butter

  • Spray bottom of 9×13 baking dish with cooking spray.
  • Preheat oven to 350-degrees.
  • Combine pumpkin, milk, eggs, sugar, spice, and salt. Mix Well.
  • Pour into a 9×13 dish
  • Sprinkle dry cake mix evenly over the pumpkin mixture
  • Top with pecans
  • Drizzle melted butter over the top.
  • Bake for 1 hour until golden brown & bubbly (sometimes longer than 1 hour).
  • Cool completely before serving!
  • Serve with Cool Whip topping. (Jennifer recommends French Vanilla flavored; we used regular).

5 Stars, a Pig & a Firetruck

This was my view at our anniversary dinner on Monday night. Fancy place settings, a pig, and a firetruck.

… and it was wonderful.

We decided at the last minute to go to a really nice restaurant to celebrate our anniversary. At that late date, we didn’t have anything arranged to do with the kids, so we decided to take them with us. Thankfully, this wasn’t their first trip out of the house! They knew how to behave and they did marvelous.

Avery was disappointed. It was his school’s “night” at Mooyah (a local hamburger joint) and the school was getting a bit of the profits that night. Evidentally, they drove the point home because Avery was devastated … like cried in the parking lot devastated …that we wouldn’t chose Mooyah for our anniversary dinner. Now, I love me some Mooyah, but it’s not the swanky anniversary joint that I had in mind.

But, one visit to the bathroom at Perry’s and Avery was a new man! They have a television built into the mirror. He was beyond impressed!!!!

Typical male.

Looking back on it, Don and I remembered that this is the 3rd Anniversary Dinner that the kids have shared with us. It’s becoming a habit. And, truthfully, I’m not disappointed. What better way to celebrate the beginning of your family then to include the entire family.
